On a recent trip to Washington, DC, to attend a 4th of July music bash with friends, I had to get creative with my food for our tailgating party. After answering everyone’s questions about why I was gluten free (GF), I had to take stock of what everyone was bringing, figure out what I could eat that was already on the list, and figure out an easy dish to bring along that everyone would want to eat (without saying, “Ewww, that’s gluten free?”).
My gracious host during this trip had an easy pasta salad recipe that I knew I could use GF pasta in without anyone knowing any better. GF pastas have come a long way in the last few years. Many of them are blends of rice, corn, and quinoa flours and they are quite good. Once the pasta was boiled and drained, it took me about 10 minutes to put it all together. Needless to say, it was a hit with everyone (they didn’t even know it was GF!).
This recipe is also very useful when it comes to picnics, potlucks, and beach outings so it’s going to become a regular item in my food rotation.
- 1 package of gluten-free pasta (my favorite is Trader Joe’s Organic Brown Rice & Quinoa Fusilli pasta)
- 1 8.5oz jar of julienne cut sundried tomatoes in oil
- 1 can black olives
- 1 small package of feta cheese
- Cook the pasta according to its directions and drain over the sink. I always rinse my gluten-free pasta after cooking it to get rid of the weird starch-like film on it. Then put the pasta in a large mixing bowl.
- Add jar of sundried tomatoes and the oil to the pasta.
- Chop olives and add to pasta.
- Add as much or as little feta as you desire.
- Mix everything together and chill in the fridge.
The great thing about this gluten free pasta is that it can be used in pretty much any pasta salad you want. Get creative! What are some of your quick-and-easy GF pasta recipes?
